Ingredients
- 3-4 peeled plantains, sliced
- 1/2 tsp. salt
- 1 tsp. curry powder
- 1/2 tsp. cinnamon
- 1/8 tsp. cloves
- 1-2 cups coconut milk
Directions
Combine all ingredients except coconut milk in heavy saucepan. Pour in 1 cup of coconut milk and simmer over low heat until plantain is very tender and milk is absorbed. Add more cocnut milk if necessary. Serve hot.
