South Africa : Green Bean Bredie

Ingredients
  • 2 large onions
  • 2 lbs. rib of mutton, diced
  • 2 tblsp. oil
  • 1 lb. green beans, sliced lengthwise
  • 1/2 tblsp. sugar
  • 1/2 tblsp. salt
  • 1 chili pepper, crushed
  • 6 medium potatoes, peeled and halved
Directions

Fry onions and mutton in oil over medium heat, stirring comstantly to prevent burning. When lamb is evenly browned, add the beans, sugar, salt, and chili; pour in 1 cup water and simmer gently for an hour. Put in the potatoes and cook another hour, or until meat is tender. Serve with rice.
