Benin : Sardines in Tomato Sauce

  • 1 large onion
  • 1 clove garlic, finely chopped
  • 1 tblsp. oil
  • 1 can sardines
  • 2 large tomatoes, chopped, or 2 oz tomato paste
  • 1 chili pepper, or 1 tsp. cayenne pepper
  • 1 bunch leafy greens, or 1 small package frozen greens (spinach, turnip greens, kale, etc.)

In a large, heavy pan, brown onion and garlic lightly in oil. Add the other ingredients and cover with about 2 cup water. Simmer for 30 minutes. serve over rice or stiff porridge (see recipes in Grains and Bread chapter).

Variations : Substitute fresh, smoked or salt-dried fish for the sardines
